Ingredients:
Ingredients:
3/4 cup unsalted butter or vegetable shortening at room temperature
1 cup sugar
1 egg, slightly beaten
1/4 cup dark molasses
2 cups flour
1/2 tsp salt
1 tbsp ground ginger
1 tsp ground cinnamon

Directions:
Directions:
1. Cream butter and sugar. Add slightly beaten egg and dark molasses. Mix well.
2. Add dry ingredients and mix well. Cookie dough shouldpull way from edges of the bowl, but should not be too dry. If you are rolling out the dough for cut cookies, add a bit more flour to stiffen the dough.
3. Turn out dough onto a floured surface, sprinkle flour on top of dough and roll out. Make cookie cut outs of your preference.
4. Bake for 10-14 minutes, rotating pan halfway through baking. Cookies are done when top is golden brown. Allow to cool for about 15 minutes before transferring.

Personal Notes:
Personal Notes:
"This yummy gingerbread cookie dough works well for children’s gingerbread creations, and for making a gingerbread house, or castle – it is an original from Ali Pyper, check out her platform for sticky icing, castle and house templates. It is so good that in the past I have kept all excess pieces in the freezer and sneaked bites to go with my evening tea during the long, dark, cold Canadian winter." – Janine
