1/2 cup chopped white onions
1/2 stick butter
6 tsp minced garlic
1/4 cup flour
1 cup milk or heavy cream
1 cup chicken broth
1 TBSP hot sauce
10 oz frozen spinach (thaw, rinse with water, and wring dry)
8 oz Parmesan shredded cheese
8 oz Mozzarella shredded cheese
1/2 cup mayonnaise
8 oz sour cream
garlic power - to taste
paprika - to taste
tortilla chips

Directions:
Directions:
1. On stove in pot, saute onions, garlic and butter for 5 minutes.
2. Add flour and stir, then add in milk and broth and stir
3. On medium heat, add cheese and hot sauce, stir until melted
4. Add sour cream, mayonnaise, and spinach, stir
5. Heat until all mixed and warm, add garlic powder and paprika to taste
6. Serve warm with tortilla chips

When I lived in Austin, I came across the best spinach dip ever at a local restaurant. Years later living in Washington DC area and craving the spinach dip, I remembered what it tasted like and decided to create this recipe.
