1, 4 ounce can chopped green chilles
2 cups grated sharp cheddar cheese
16 ounce cream style cottage cheese
1 clove garlic, crushed or 1/2 tsp dried garlic
1/2 tsp ground coriander
1/4 tsp salt
1 dozen refrigerated corn tortillas
Salad oil
1 can tomato sauce
1/2 cup sour cream
2 tbsp chopped green chilles
1/2 cup grated sharp cheddar cheese.

Directions:
Directions:
1. Combine first six ingredients (chilles, 2 cups cheddar cheese and cottage cheeses, spices and salt) to form filling.
2. Fry tortillas a few seconds on each side in the salad oil – until limp and drain on paper towel. However, it is not necessary to fry the tortillas and for speed this step can be skipped.
3. Spoon 2 large tablespoons of filling on each tortilla. Roll up and place seam side down in a 13 x 9 x 2 inch dish.
4. Next, combine the tomato sauce, sour cream and additional 2 tbsp of green chilles and pour over enchiladas.
5. Finally, sprinkle with 1/2 cup of grated sharp cheddar cheese and bake uncovered for 30 minutes at 350 F until it bubbles.
