1 1/2 pound side of salmon
1/2 cup dark brown sugar
2 tbsp soy sauce
2 tbsp sherry (or cooking sherry)
2-4 tbsp melted butter
Sea salt
Pepper
Lemon slices
2 tbsp chopped fresh parsley

Directions:
Directions:
1. Position rack in middle of oven to 375 F. Line a baking tray with a large piece of foil, big enough to fold over and seal to create a packet.
2. In a small saucepan, melt butter over low-medium heat. Add the sugar, soy sauce, and sherry and whisk until the sugar has melted through the butter and the mixture is combined.
3. Place the salmon onto the lined tray and pour the butter-sugar mixture over the salmon, using a pastry brush or spoon, and spread evenly. Sprinkle with a good amount of salt (2 tsp) and a bit of pepper. Fold the sides of the foil over the salmon to cover and completely seal the packet closed so the butter does not leak.
4. Bake until cooked through, 15-18 minutes depending on thickness and preference of doneness. Open foil, being careful of the escaping steam, and then grill under broiler for 2-3 minutes to caramelize the top.
5. Garnish with parsley and serve with lemon slices.
