3 cups cake flour
2 teaspoons baking powder
3/4 teaspoon salt
1 cup butter
1 pound confectioner sugar
4 egg yolks
1 cup milk
1 cup shredded coconut
1 teaspoon vanilla extract
4 egg whites stiffly beaten

Pineapple Filling
1 can (20 oz can) crushed pineapple (In it's own juice)
3 tablespoons cornstarch
1/2 cup of sugar
1 tablespoon of butter
1 teaspoon of lemon juice

Directions:
Directions:
Preheat oven to 350 degrees.

Combine 3 cups cake flour, 2 teaspoons baking powder, 3/4 teaspoon salt, and 1 pound sifted confectioner sugar, set aside.

Beat 4 egg whites separately until stiff.

Mix 4 egg yolks, 1 cup of milk and 1 teaspoon vanilla extract. Fold in 4 stiffly beaten egg whites.

Add wet mixture to dry ingredients.

Place mixture in three 9 inch pans.

Bake 25 minutes.


Pineapple filling

Combine in a saucepan, 1 20 oz. can crushed pineapples (in its own juice), 3 tablespoons cornstarch (sifted) and 1/2 cup sugar. Cook till stiff.

Remove from stove, add 1 tablespoon butter and one teaspoon lemon juice
