16 oz. oysters
1 (10˝ oz.) can cream of potato soup
1/4 c. butter
1 c. milk
1 c. half & half (for lower calories/fat, substitute milk)
1 stalk celery, chopped
1 med. onion, chopped
1/8 c. tomato sauce (optional)
2/3 c. uncooked rice, cooked according to package directions (optional)

Sauté celery & onion in butter until tender. Combine with soup, milk, half & half, and tomato sauce. Add salt and pepper to taste. Simmer & stir occasionally for 15 - 20 minutes. Be careful that it doesn't boil, as milk will burn. If it doesn't look "soupy" enough, add some more milk. Add oysters with about 1/2 of the liquid and cook about 10 minutes. Serve over rice, if desired. (It's good without the rice too.)
