1 pkg. Jiffy corn muffin mix
1 egg
2 Tbsp melted butter or shortening
½ C milk
Directions:
Directions:
Preheat griddle to medium heat (350º) and grease lightly
Combine all ingredients until large lumps disappear
Use ¼ C measure to pour batter onto hot griddle
When pancakes bubble around the edge, flip
Cook until both sides are lightly browned
