Sweet Potato Gnocchi Recipe

500g white potatoes
750g sweet potatoes
1/4 cup parmesan
2 cups plain flour
1 egg yolk
dried herbs - I added oregano, salt, garlic and onion powder


With gnocchi I cooked:
onions
mushrooms
spinach
garlic
pesto
red pepper

Directions:
Directions:
Peel potatoes and cut into small pieces - boil for about 10-15 minutes until soft
Drain potatoes and mash
Add spices and let cool completely
Add egg yolk, plain flour and mix. Transfer to a floured surface and continue to kneed until it has formed into a soft dough - you don't want it to be super sticky
Roll the dough into a circle. Cut the circle in quarters - using one quarter at a time, break off pieces of dough and roll into sausage form and cut into gnocchi size pieces
Roll each piece into a small ball and press with fork to give it that ridged look
Cook gnocchi by boiling in water until they rise to the top then sear to get it crispy.

Freeze on a sheet pan first then put in a bag when freezing. It made 3 quart size bag fulls of gnocchi. I froze 2 and kept one for dinner!
