1 1/2 cups rice (I used Calrose)
4 cups water
2 cups heavy cream
4 cups whole milk
2 cups sugar (I reduce this to 1 3/4 c)
3 eggs
1 tsp. vanilla
1 pinch cinnamon (we like tons more cinnamon)

Beat eggs well with a fork. Add vanilla and cinnamon, set aside.

In a large pan, about dutch oven size, bring water and rice to a boil. Lower heat to medium-high. Stir constantly. When the water is almost boiled out (about 15-20 minutes), add cream & milk. Continue cooking and stirring for another 15 to 20 minutes. The mixture will become thicker, then add sugar a little at a time. Cook another 15-20 minutes. When the mixture looks somewhat thick and cooked down, put a little in the eggs to temper them, then slowly whisk into the hot mixture. You can add a little more cinnamon if you like. Cook another 5-10 minutes until it looks like it is getting a filmy layer forming on top. Remove from heat and chill.
