2 cups all purpose flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
2 cups blueberries
1 egg
1/3 cup vegetable oil
1 cup whole milk

Directions:
Directions:
Preheat oven to 400 degrees

In a large bowl, combine:
2 cups flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt

Gently stir in blueberries with a fork.

In a separate bowl, lightly beat:
1 egg
1/3 cup vegetable oil
1 cup whole milk

Make a well in the center of the flour mixture.
Pour wet ingredients into flour mixture all at once and stir quickly with a fork just until dry ingredients are moistened. (Do not over mix)
Spoon batter into cupcake liners.
Sprinkle with sugar.

Bake for 20-25 minutes or until golden.
