2-3 cups diced chicken
2 cups elbow macaroni uncooked
2 cans soup: cream of chicken or cream of mushroom or 1 of each
1 3/4 cup chicken broth
1/2 cup diced onion
1/2 cup diced celery
1/4 cup green pepper or red
12 oz. jar diced pimento
15 oz can water chestnuts

Mix ingredients in order. Pour in greased 9X13 pan. Sprinkle 8 oz. cheddar cheese on top and stir in a little.

Cover with foil and refrigerate over night.

Uncover next day and make 350 degrees 1 1/2 hours or until bubbly.

The recipe came from my mother and dated 1990. It is a great "make the day ahead" casserole.
