Directions:
Line a mini loaf pan (6"X3") with plastic wrap.
In bowl of food processor, whirl avocado, vanilla and salt.
In heavy bottomed pot set over low heat, or in a double boiler, melt chocolate, orange juice, and maple syrup. Stir constantly until melted and smooth.
Scrape the chocolate mixture into food processor with avocado and blend until smooth and glossy.
Turn mixture into loaf pan and smooth the top.
Refrigerate, uncovered until top is firm and dry; then cover top with more plastic and refrigerate until loaf is firm. 4-6 hours or overnight.
To unmold, invert over a serving dish and remove the loaf pan, then carefully peel away plastic.
