8 oz - Unsalted Butter, at room temperature
¼ cup - shallot, finely minced
2 tablespoons of bourbon (optional)
2 tablespoons - pure maple syrup
2 tablespoons - fresh flat - leafed parsley, minced
2 teaspoons - sea salt
1 teaspoon - freshly ground black pepper

Directions:

1. In a medium bowl combine all ingredients and combine until they come together into a paste
2. On your work surface, put down a large piece of plastic wrap/ cling film and transfer the butter mixture to the center of the wrap
3. Form butter into a rough log, about 1.5 inches in diameter
4. Roll the plastic wrap tightly around the butter to form a smooth log and twist both ends of the wrap to close
5. Place the log of butter in the freezer from approx. 30 minutes before use or keep stored in the freezer until needed.
You can cut the butter into slices and use as necessary
