First of all.... this is no way as good as Jose Pepper's Espinaca. But it will do in a pinch when you want espinaca, especially when you don't live near a Jose Peppers.

16 oz cream cheese
½ pt (1 C) heavy whipping cream
2 4 oz cans of Ro-tel diced tomatoes, drained
¼ C jalapeno
8 oz frozen chopped spinach
4 chicken bouillon cubes
8 oz Velveeta cheese, cubed
½ C onion, finely chopped

Directions:
This is best cooked in a crockpot. Mix all the ingredients in the crock pot and cook on high. Stir occassionally. For better taste and if you have time, mix the whipping cream, Ro-tel, jalapenos, spinach, bouillon cubes, milk and chopped onion together in a sealed container and put in the refrigerator the night before you want to prepare it. Then mix with the cream cheese in the crockpot.
