2 c almond flour
2 t baking soda
1/2 t salt
1 T cinnamon
3 large eggs
3 ripe bananas, mashed
1/2 c melted butter, room temperature
2 T honey
1 t apple cider vinegar
2 c unsweetened coconut
1 1/4 c pitted dates, chopped finely
1 1/2 c carrots, grated
3/4 c walnuts, chopped

Preheat oven to 325º

Grease a 12 c muffin tin.

Mix flour,baking soda, salt and cinnamon together in a large bowl.

Whisk together the eggs, mashed bananas, melted butter, honey and vinegar, in a separate bowl.

Stir the wet ingredients into the dry ingredients.

Fold in the coconut, dates, carrots and walnuts.

Spoon the mixture into the muffin tin.

Bake for 40 minutes, until golden brown and a skewer comes out clean.
