6-8 eggs, beaten with 1/4 tsp. Salt and 1/4 tsp. Pepper
1/2 - 1 c. Green pepper, diced
1 c. Ham, 1/4 inch thick, diced
1 -1 1/2 c. Diced leftover French fries
1 c. Grated cheddar and muenster cheese

Preheat oven to 350º F.
Preheat 8-9 in. Oven proof Fry pan over medium- high heat with 2 Tablespoons of Olive oil. Add diced ham and saute until a little golden. Then add green peppers and saute for one minute before adding diced leftover French fries. Add the eggs and grated cheese. Let it cook for 5 minutes lowering heat to medium. Then put in oven with the rack closest to the top and bake for 5 minutes until top is completely set. Remove from oven and serve with toast.

I had leftover French fries and I had been wanting to make a potato Frittata so when there were leftover fries I decided to use them. Chopped onions can be added with the green peppers but this was served to my son, Derek who is not an onion person.
