½ cup margarine
½ cup sugar
1 Tbsp milk
¾ cup flour
1 tsp baking powder
1 cup coconut
1 ¾ cups Graham wafer crumbs

Filling:
1 cup sugar
1 egg
1 Tbsp cornstarch
1 cup water
juice and rind from one lemon

Directions:
Directions:
Preheat oven to 350ºF and grease a 8x8-inch pan. In large bowl, cream margarine and sugar. Add milk and mix well. In medium bowl, combine all dry ingredients, add to cream mixture and mix until crumbs form. Press into the pan, saving some for the topping. In a medium bowl, cream sugar, egg, and cornstarch. Gently add water and lemon. Spread over bottom and top with remaining crumbs. Bake for about 30 minutes until top is golden brown.
