5 eggs, separated
pinch of salt
1 c. sugar
1 t. lemon extract
1 c. sifted flour (sift 5 times before measuring)

Directions:
Directions:
Beat egg whites until stiff, adding salt. In separate bowl, beat yolks until pale yellow. Beat in sugar and lemon extract. Gently fold egg yolk mixture and egg whites together. Fold in flour. Pour into greased tube or Bundt pan. Bake at 350º for 45 minutes. Let cool before removing from pan.
