"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
1 1/2 c warm water
1 T active yeast
1/8 c sugar
Let these three sit for 5/10 minutes to give the yeast a chance to activate.

1/4 c oil
1 egg
1/2 tsp salt
Mix in these three ingredients.

3 c flour
Mix in the first 3 cups

3 c flour
Mix in the next 3 cups

1/4 c water (wait to add this if needed)

After 10 minutes in the mixer, it should form into a ball.

Transfer ball into a greased bowl and let it sit until it doubles (2-4 hours). Covered with towel.
Punch it down and roll it into a ball.

Cut ball into half; then cut each half into three sections (giving you 6 sections)

Roll each section into a ball and then flatten with roller pin.

Roll each flattened piece into a log/rope (you should have 6 logs).

Braid 3 logs together; do this again (giving you 2 braided loaves).

Add the braids to baking sheet and add egg wash.

Let logs sit for another hour until they double in size again.

Put into the oven at 375º for 45 minutes.
