12 plum tomatoes
½ cup bread crumbs
¼ cup Parmesan cheese
salt and pepper to taste
melted butter

Split tomatoes length wise (through the stem). Scoop out the pulp and put in a small pot. Set the cored haves of 8 tomatoes aside (16 halves) Chop the remains tomatoes and put in pot with with the tomato pulp. Cook for about 10 minutes. Add bread crumbs, Parmesan cheese salt and pepper. Stir well and cook for another 2 minutes. Let cool slightly and spoon into reserved tomato shells. Cook on hot grill for 3 or 4 minutes, basting several times with the melted butter.

I serve these with Shish Kebabs and saffron rice. When I first started cooking Shish Kebabs I put tomatoes on the skewer. This just did not work. The tomatoes would cook so much faster than the meat that before getting the meat done, the tomatoes would fall off of the skewers. I would then add them to the grill just before the Shish Kebabs were done. This gradually evolved into these roasted tomatoes. Not only are they very tasty, the brown of the meat, the yellow of the saffron rice and the red of the tomatoes make for a beautiful presentation.
