1 lb ground meat (they use chicken but I’ve used pork or beef)
½ cup Kikkoman’s stir-fry sauce
¼ cup green onion (sliced thinly on a bias)
¼ cup water chestnuts (diced)
1 head lettuce (iceberg or butter)
2 teaspoons neutral oil
1 package fried chow mein noodles
1 tablespoon soy sauce
1 teaspoon rice wine vinegar
1 teaspoon white sugar

Rinse and dry lettuce and green onion. Cut head of lettuce in half, remove core by cutting around core in “v” shape. Separate individual leaves from head, set aside. Slice green onions thinly from root end at a 45 degree angle to achieve bias, and set aside. Combine soy sauce, rice wine vinegar, and sugar in small bowl, stir until sugar is dissolved. Heat a medium sized skillet over high heat and add oil. Add ground meat when oil shimmers in pan and begins to smoke. Do not disturb meat after placing in pan to allow for searing. Once a dark brown sear is achieved, begin breaking up meat, let it sit again to develop more color. Finish cooking meat, drain, and return to hot pan. Add water chestnuts and stir-fry sauce. Stir to combine. Serve in lettuce cups with fried noodles and dipping sauce.

This is a really dressed down version. You can add fresh garlic and ginger if you have it. I also like to bulk up the filling with veggies like shredded carrots, diced zucchini, or bean sprouts. Feel free to add sriracha for some spice! My family loves this recipe in the summer. It’s fast, easy, and delicious.
