1 cup pancake mix
1½ cups diced/mashed fruit of choice
1 T cinnamon
¼ cup sugar (more or less based on preference/sweetness of fruit)

1. Combine all ingredients into a thick batter.
2. Stir until all ingredients are evenly mixed and no more pancake mix is dry.
3. Let batter rest while oil is heating.
4. Fill a small pot with about 2 inches of frying oil of choice and heat on medium setting of stove.
5. When oil is ready, drop batter into the hot oil by the teaspoonful. You may use another spoon to push batter off the teaspoon and into the oil.
6. When the bottoms are golden brown, use a slotted spoon to flip the donuts onto the other side.
7. Once donuts are golden brown all around, lift out and place in a napkin-lined bowl or basket.
8. Adjust heat as needed.
9. Enjoy warm.

Because I’m a working mother of 4, I don’t have a lot of time to cook. I like to find shortcuts to make great food for my family. This sweet treat recipe is one that I usually make without measurements. I usually just eyeball the ingredients and fry. Most similar recipes add a liquid like milk to the batter. My recipe does not include any additional liquid. I have found that in omitting the addition of liquids, the sugar does not dissolve completely, resulting in a crunchy crust after frying. The crunchy crust and soft interior is always a hit with my family. I hope this easy sweet treat is a hit with your families, as well.

Lyn: You can also use a small ice-cream scoop for dropping dough into oil.
