3/4 c butter, softened
1/2 c splenda
1/2 c brown sugar, packed
1 tsp pure vanilla extract
1 egg
1 1/2 c Protein Pancake Mix (buttermilk or oat)
1 c quick oats
1/2 dark chocolate chips

Preheat oven to 350º F
Line cookie sheet with parchment paper and set aside

In a medium bowl, cream butter, splenda and brown sugar until thoroughly combined
Add vanilla and egg, beating until combined
Add protein pancake mix and oats, beat until just combined

Use a spoon or spatula to fold in chocolate chips

Use a cookie scoop to portion out dough, leaving enough room between each cookie for spreading
Bake for 9 to 11 minutes, be careful not to overcook

Carefully remove parchment paper (with cooked cookies on top) from cookie sheet onto countertop, allow to cool
