3 cups flour
1 TBS baking powder
2 TBS sugar
⅛ tsp salt
1/4 cup plus 1 TBS butter, cut
into bits
2 eggs, at room temperature
1/2 cup half-and-half
2 TBS lemon juice
Grated rind from 2 lemons
Additional half-and-half



Directions:
Directions:
Combine first 4 ingredients in a large bowl, mixing well. Cut in butter with a pastry blender until mixture resembles coarse meal.
Beat eggs, half-and-half, lemon juice, and grated lemon rind until smooth. Add to flour mixture, stirring until the dry ingredients are moistened. Turn the dough out onto a lightly floured surface.
Gently roll dough to a 1/2” thickness; cut into 2” diamonds, using a ruler and a sharp knife. Place scones 1/2” apart on a greased and floured baking sheet. Brush tops lightly with additional half-and-half. Bake at 425º for 12 to 15 minutes or until scones are golden. Serve immediately.
