1½ c all purpose flour
1½ c graham flour ( I use Bob's Red Mill brand)
1 t baking soda
½ t salt
1 c unsalted butter, softened
⅔ c dark brown sugar
3 T honey

Directions:
In a medium bowl, whisk together the flours, baking soda and salt, set aside

In a large bowl, combine the butter, brown sugar and honey and beat at medium speed until light and fluffy, about 2 minutes. Scrape down the sides of the bow. Add the flour mixture and mix on low speed jut till blended and dough comes together. Transfer dough to plastic wrap, press into a square and wrap tightly. Refrigerate at least 1-2 hours.

When ready to bake, preheat the oven to 350º and line baking sheets with parchment paper.

On a lightly floured surface, roll dough to ⅛ inch thickness and cut into 3 inch squares ( use a square cookie cutter). Space crackers a little apart. Keep gathering the scraps and re-roll and cutting till all dough is used.

Bake for 10 minutes, rotate the baking sheet and bake another 6-8 minutes or until a nice dark, golden color. Let cool for a couple of minutes before removing to a cooling rack (they will crisp as they cool). Store in an airtight container for up to 5 days.
