2 T butter, softened
½ C granulated sugar
1 egg
7 oz pkg sweetened flaked coconut
1 C pecans, chopped
1 C pitted dates, chopped
1 tsp vanilla extract

Directions:
Directions:
Preheat oven to 350ºF. In mixing bowl, cream butter and sugar; beat in egg. Add coconut, pecans, dates and vanilla extract; mix well.. Roll Tablespoons of dough into balls; place on parchment paper-lined cookie sheets. Bake 15-17 minutes. Cool on cookie sheets for 3 minutes; then transfer to wire cooling racks. Makes about 3 dozen.
