Lasagne Sheets
Grated Cheese
Onions
Garlic
Mushrooms
Courgettes
Passata/ Marinara sauce
Water
Salt
Pepper
Oregano
Cayenne Pepper (to give it a bit of a kick)
A little Sugar

Directions:
Directions:
Dice the onions, garlic, mushrooms and (peeled) courgettes.

Saute the onions and garlic and add in the other veg, passata/marinara, seasonings, a tiny bit of sugar and some water.
Cook for a few minutes until veg are a bit soft - no need to cook fully as it will finish cooking in the oven- this is a good time to taste!

Spread some of the liquid on the bottom of your dish so that the lasagne doesn't stick then put a layer of lasagne sheets- you may need to overlap them or break them to fit. Using a slotted spoon put a layer of veg, then sprinkle a layer of cheese. Top that with a layer of lasagne, veg and cheese until the dish is full. Top with a final layer of Lasagne, spoon some of the remaining liquid - no veg - on top and sprinkle with cheese.

Cover with a sheet of baking paper- so it doesn't stick to the foil- then cover with foil.
Bake at 180º for an hour, uncover and turn up to 200º for the last 10 mins so it gets nice and crispy.
