1 (10oz) bag semisweet chocolate chips
½ cup margarine
¼ cup strong brewed coffee
1 tsp orange zest
7 eggs, separated
1¾ cups granulated sugar, divided
2 tsp potato starch

1. Preheat oven to 350º

2. Heat chocolate, ½ cup of margarine, coffee, and orange zest in microwave on medium 1 minute, stirring once. Heat 45 seconds longer, and stir until chocolate melts.

3. In medium bowl, with mixer on high speed, beat egg whites 4 minutes or until soft peaks form. In large bowl, with mixer on high speed, beat egg yolks and ½ cup sugar 4 minutes or until pale. Reduce speed to low and beat in chocolate mixture. Fold in about ¼ of the egg whites until smooth. Fold in remaining egg whites until just combined.

4. Grease 9-inch springform pan with remaining margarine. Add ¼ cup sugar to pan and rotate pan to evenly coat bottom and sides; pour batter into prepared pan. Bake 60 minutes or until toothpick inserted 1½ inches from edge of pan comes out with a few moist crumbs. Cool cake in pan on wire rack.

5. In blender, blend remaining 1 cup sugar and potato starch on high speed until powdery. To serve, run small knife around edge of pan then remove side of pan. Dust with sugar mixture.
