Dulce de Leche Carmel
1-14 oz can sweetened condensed milk
1/4 cup whole milk

Vanilla Sauce
2 cups heavy cream
1/4 cup granulated sugar
1 vanilla bean
2 egg yolks (from large egg)
1 tsp vanilla extract
1/2 tsp butterscotch flavoring

Buttermilk Pancakes
13 1/2 oz (2-2/3 cups) all-purpose flour
6 T granulated sugar
1 tsp salt
1 T baking soda
3 cups buttermilk
2 large eggs
1/4 cup unsalted butter, melted

1. preheat oven to 400º

2. Make the dulce de leche caramel by combining a whole can of sweetened condensed milk with the whole milk in a large loaf pan. Cover the pan with aluminum foil. Place the loaf pan into a 9 x 13 - inch baking pan filled with 1 inch of hot water and place the pan into your oven for 2 hours and 45 minutes. Check the water level every hour and add more hot water as needed. When it's done the caramel will be thick and dark tan. Cool uncovered.

3. Make the vanilla sauce by combining the cream with half of the sugar in a small saucepan over medium/low heat. Slice the vanilla bean in half lengthwise and use the dull side of a knife to scrape the tiny seeds from the bean and add them to the cream. Heat the mixture, stirring often, just until it begins to boil, then turn it off the heat

4. In a medium bowl whisk together the remaining sugar with the egg yolks until the sugar has mostly dissolved. Temper the egg yolks by stirring in a few Tablespoons of the hot cream mixture, then pour the egg yolks into the cream and stir to combine. Heat the cream again until bubbling around the edges and thick. Turn off the heat and stir in the vanilla and butterscotch. Pour the vanilla sauce into a medium bowl that is set in a larger bowl filled with ice. This will cool the sauce quickly. Stir occasionally until cool.

5. Make the pancakes by combining the flour,sugar,baking soda and salt in a large bowl. Add the buttermilk,eggs and melted butter, and mix well with electric mixer on medium speed for 1 minute or until smooth.

6. Preheat a large non-stick skillet or griddle over medium heat. Rub the pan with a little oil or spray it with nonstick cooking spray.

7. Pour each of the sauces into squirt bottles if you got them. If not,you can drizzle the sauces on the pancakes with a spoon. Drizzle some of the vanilla sauce on top of each pancake as you stack them. After stacking on the top pancake, drizzle the vanilla sauce over the top in a sweeping motion, then do the same with the dulce de leche caramel. Squirt some whipped cream on top of the stack and serve.
