12 Oz spaghetti
2 ripe avocados
½ C fresh basil
2 cloves garlic
2 Tbsp fresh lemon juice
Kosher salt to taste
Black pepper to taste
⅓ C olive oil
1 C cherry tomatoes, halved
½ C canned corn, drained and rinsed

Optional Toppings:
Flaked parmesan or finely shredded mozzarella cheese

Directions:
Directions:
1) In a large pot of boiling water, sprinkle a pinch of kosher salt and cook pasta according to package. Drain well.
2) In a food processor, combine avocado, basil, garlic and lemon. Season with salt and pepper to taste. With the motor running, add olive oil in a slow stream until emulsified; set aside.
3) In a large bowl, combine pasta, sauce, cherry tomatos and corn.
4) Serve immediately with any desired cheese topping.
