Freezer Beef and Bean Burritos Recipe

1 lb. ground beef
1 medium onion, diced, divided
1/2 t. cumin
1/2 t. garlic salt, divided
1 1/2 T. chili powder
10 (8") flour tortillas, warmed
1 can refried beans
about 1 c. shredded Co-jack cheese
canola or vegetable oil
sour cream and salsa for serving

In a large heavy skillet, cook beef over medium heat until no longer pink; drain. Add 1/2 of the diced onion and continue to cook until onions are translucent. Add cumin, 1/4 t. garlic salt and chili powder. Stir and simmer 10 minutes. Remove from heat.

In a medium skilliet, cook remaining onions in a bit of oil until translucent. Add refried beans and 1/4 t. garlic salt. Stir and cook to well combine. Remove from heat.

Spoon about 1/3 c. of beans off-center on each tortilla; top with about 1/4 c. beef mixture. Sprinkle with desired amount of cheese. Fold bottom side of tortilla up and over the mixture. Fold in the sides and roll from the bottom to enclose mixture.

Heat a small amount of oil in heated skillet. Brown burritos in oil on all sides - 1 or 2 at a time.

Freezer option:
Individually wrap cooled burritos in paper towels and foil; freeze in a freezer container or ziplock bag. To use, romove foil; place paper towel wrapped burrito on a microwave-safe plate. Microwave on high until heated through, burning once, 3-4 minutes. Let stand 20 seconds.
