4 medium sweet potatoes
1 bunch of kale, washed and patted dry
1 medium red onion
2 tbsp melted coconut oil or olive oil
1 tsp each of ground cinnamon and dried thyme
salt and ground pepper to taste

Directions:
Directions:
* Preheat oven to 375º
* Peel and chop sweet potatoes into 1-inch cubes and place in a large mixing bowl.
* Remove kale from stems. Chop kale and onion into bite-sized pieces and add to bowl.
* Add cinnamon, thyme, salt and pepper
* Pour melted coconut oil or olive oil over mixture and stir to combine.
* Pour ingredients into a baking dish (I usually use a baking sheet so I can spread out and make more)
* Cook for 45 minutes or until potatoes are fork-tender.
