2 tbsp. olive oil
1 large onion, chopped
1 tsp. salt
2 large leeks, white and green parts, sliced
2 c. greens (swiss chard, kale, spinach, collards)
2-6 tbsp. fresh ginger, minced
2 quarts vegetable or chicken stock
1 tbsp. fresh lemon juice
2 tbsp. fresh parsley (optional)

Cook onions with salt in oiled pot over low heat until soft and golden. Add in leeks and cook for additional 10 minutes. Add greens and ginger, sauteing for 5 minutes more. Add broth and cook for additional 5 minutes. Add lemon. Puree with a wand or blender.
