3 ¼ oz. (90 g) pitted prunes
¾ c. (180 ml) pumpkin puree
½ c. (120 ml) maple syrup
½ c. (120 ml) orange juice
¼ c. (60 ml) sunflower or other oil
2 tsp. (10 g.) finely ground chia seeds
1 tsp. (5 ml) vanilla extract
1 tsp. (5 ml) apple cider vinegar
¼ c. (35 g.) pumpkin seeds toasted
½ c. ((50 g) walnut pieces
1 ¾ c. (240 g) spelt flour
2 tsp. (10 ml) baking powder
1 tsp. (5 g) baking soda
½ tsp. (2.5 g) sea salt
2 tsp. (5 g) cinnamon

Preheat oven to 350º F
Line 8" loaf pan with parchment paper or grease and flour pan.
In bowl or food processor, process prunes until almost smooth.
Add pumpkin, maple syrup, orange juice, oil, chia seeds, vanilla and vinegar and process until blended.
Stir in pumpkin seeds and walnuts.
In large bowl, sift flour, baking powder, baking soda, salt and cinnamon.
Pour wet mixture over dry and stir until combined.
Pour into pan and smooth the top.
Bake in over 50 - 60 minutes, rotating halfway through.
Cool 10 minutes before removing from loaf pan.
