1 lb. potatoes, peeled and cubed
1 tsp salt
1/2 C cauliflower puree
2 Tbsp butter
1/2 C low fat buttermilk

Directions:
Directions:
Put the potatoes and salt in a large pot and add enough water to cover the potatoes b about 3 inches. Bring to boil over high heat, then reduce the heat and simmer until the potatoes are tender when pierced with a fork, about 15 to 20 mi utes. Drain well in a colander.

Mast potatoes with masher or mixer. Add the cauliflower puree, butter, and buttermilk, and beat with a mixer until smooth and creamy.
