"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
1 lb ground beef
1/2 lb ground pork
3/4 c bread crumbs
3/4 cup milk
1 egg beaten
1/2 c minced onion
1 T Worcestershire sauce
1 t salt
1 T parsley flakes
1/4 t paprika
1/4 t nutmeg
1/4 t pepper
______________
Gravy
1/2 c butter
1/2 c flour
2 c beef bouillon
1/2 c sour cream
1/4 tsp paprika
dash of salt, pepper and nutmeg

Directions:
Directions:
Preheat oven to 350. I get out a 9x13 and 8x8 pan before I start mixing the ingredients. Let the bread crumbs soak in the milk while you measure all the other ingredients then combine all. I usually use my hands to combine everything well. Once combined start shaping the meatballs - I like smaller ones and they cook faster.

Bake at 350 for 1/2 hour to 45 minutes. Larger meatballs will take more time. I usually cut one open to make sure they are cooked through.

Gravy
Melt butter, then mix in flour.
Add bouillon to flour mixture. Bring to a boil for approximately 1 minute then reduce heat. I usually use a whisk.
Add sour cream, paprika, salt, pepper and nutmeg.
Pour gravy over cooked meatballs.

Serve with mashed potatoes, egg noodles or rice.

Personal Notes:
Note that the meatballs can be cooked on a stovetop or electric skillet. Mom used to cook them on an electric skillet and then make the gravy in the same pan with milk. I've never mastered her gravy. She had multiple recipes but this is the closest I could get to hers.
