3 lbs. chicken wings
1 tsp. kosher salt
1 tsp. black pepper
1 tsp. chili powder
1 tsp. paprika
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. ground cumin
1/2 tsp. cayenne
Blue cheese, for dipping
Hot sauce, for serving

Preheat oven to 250 degrees.

Mix all the dry ingredients in a bowl.

Put the wings in a large plastic bag. Add the spice mixture and shake and press until all the chicken is well covered.

Put a wire rack(s) in a large baking sheet. Spay with canola oil (or other high heat oil).

Put the wings on the rack and place on the middle rack in the oven.

Cook for 4 (four) hours, turning every hour or so.

Remove, cool and serve with blue cheese dressing and hot sauce (although they don't need anything else).

Yes, cook them for four hours because these are by far the best wings I've ever cooked. The skin is crispy and the meat just falls off the bones. Best served warm. These are mildly spicy. You can add a bit more cayenne if you like really hot wings.
