2 # round steak or sirloin (1/2 inch thick)
1/4 cup flour with S&P
1 tsp. dry mustard (opt)
3 T. shortening
1 medium onion, sliced or chopped
1 small green pepper, diced
1 qt. whole tomatoes ( or use can of 28 oz. )

My add on: 1 tsp garlic powder

Cut meat into 6- 8 serving pieces. Pound each piece to1/4 inch thick.
In shallow dish, mix flour and salt and pepper. Add dry mustard if desired.
In large skillet, heat shortening and fry meat until browned on all sides. Top with tomatoes and onions, stirring just to make sure meat is not sticking. Cover and cook on low heat for 1-1.5 hours until meat is tender. Add green pepper last 15 minutes. Remove meat to deep dish or platter. Skim off any fat and thicken juices if desired for a gravy.

For less sauce- use 16-24 oz. tomatoes.

The beef can be browned, covered and baked with tomatoes and onions ( 350º for 1 hour) adding green pepper for 15 more minutes at end.
Or make in crock pot cooking on low 6-8 hrs. ( I use less tomato juices) Check for doneness and thicken juices if desired.


Great with rice or mashed potatoes or scalloped corn
