1 lb. fresh asparagus
2 T. chopped green onions
3-4 T. chopped parsley
1 T. chopped green pepper
2-3 T. red cider vinegar, or red wine vinegar
1/4 c. vegetable oil
Lettuce leaves for serving
2 boiled eggs, chopped
Paprika

Cook asparagus 4-5 minutes until crisp tender with small amount of salt & pepper. Drain & cool. Add green onions, parsley, and green pepper. In separate bowl, mix vegetable oil and vinegar. Pour over asparagus mixture. Marinate several hours or overnight in refrigerator. Drain & serve on lettuce. Put chopped eggs on top and sprinkle with paprika.

Note: If this is not enough to marinate, add some Good Seasons or Ken's Italian dressing.
