3 tbsp. butter or margarine
1 cup sugar
1 tsp. vanilla
2 eggs
1 cup milk

Directions:
Stir flour, baking powder, salt and nutmeg together. In separate bowl, cream butter and half the sugar. In another separate bowl, beat the eggs until light and add remaining sugar, gradually beating between additions. Combine butter and egg mixture and add vanilla.

Add dry ingredients alternately with milk to make a dough that is soft, but not sticky. Cover bowl and chill for an hour. Roll dough on a floured surface until it is about ¼" thick. Cut with a donut cutter, or use a glass and a thimble/small shot glass for centre. Heat vegetable oil and deep fry each donut about 1 to 2 minutes per side.

Mix white sugar and icing sugar for dipping.

Personal Notes:
Do not cook more than 4 at a time (it cools the oil down). Do not overcook, cook until golden, otherwise they will harden in a few hours. For sugar dipping, put donuts in a bag with mixed sugar and shake. To refresh donuts, put them in a wet paper bag, closed tight and put in oven on moderate heat.
