1 cup vegetable oil
1/2 cup powdered sugar
3/4 cup butter
2 eggs, beaten
2 teaspoons vanilla extract
1 tsp peppermint extract
4 cups all purpose flour
1/2 tsp salt
1 tsp baking soda
1-1/2 cups crushed candy canes (pounding/crushing works best as you want chunks of candy cane, using a food processor results in too much candy cane dust) Near Christmas I have found bags of already crushed candy canes in stores, but you can't always find them). Bob's Candies sells crushed peppermint candy in a can on their website too)

OPTIONAL: 1 cup mini chocolate chips OR 1 cup melted chocolate

Preheat oven to 375º

Line 3 baking sheets with parchment paper, if desired, otherwise use ungreased pans.

Stir flour, salt and baking soda together in a medium bowl and set aside. In bowl to your mixer, or large mixing bowl if you are using a hand mixer, cream sugars, oil and butter together until light and fluffy. Add eggs, vanilla and peppermint extract. Stir in the crushed peppermint pieces. Add flour mixture and beat until well combined. Drop by teaspoonfuls onto baking sheets, leaving 2" between each cookie. Bake for 7-10 minutes until cookies just begin to brown around the edges. Remove from oven and immediately remove cookies from pan and put on cooling rack to cool.

These are delicious as is, but you can add 1 cup mini chocolate chips with the flour if desired for a chocolate peppermint cookie. At Christmastime I put one cup melted semi-sweet chocolate in a piping bag and pipe a chocolate pinwheel on top of each cookie after it is cooled, then sprinkle a few Christmas sprinkles on the chocolate before it sets.

As long as you don't over bake these, they are a wonderful, soft chewy cookie, bursting with peppermint flavor.
