• 5 slices hardwood smoked bacon
• 1 red bell pepper, finely chopped
• 1 green bell pepper, finely chopped
• ½ cup (~2 stalks) celery, finely chopped
• 1 cup (~1 small) yellow onion finely chopped
• 1-2 small jalapeno peppers, optional* seeds removed and finely diced
• 1 can (15 ounces) light red kidney beans
• 1 can (15 ounces) dark red kidney beans
• 2 cans (15 ounces) chili (pinto or kidney) beans in mild sauce
• 2 cans (28 ounces) petite diced tomatoes, undrained
• 1 pound (16 ounces) ground beef chuck
• 1 pound (16 ounces) Italian sausage

Seasonings
• 4 tablespoons chili powder
• 1 tablespoon dried oregano
• 2 teaspoons cumin
• 1 teaspoon dried basil
• 1-2 tablespoons of cocoa powder
• 2 teaspoon seasoned salt
• 1 teaspoon pepper
• 1 teaspoon cayenne pepper
• 1 teaspoon paprika
• 5 tablespoons brown sugar
• 1 tablespoon Worcestershire sauce
• 1 tablespoon minced garlic
• Optional: fresh cilantro, sour cream, freshly grated mild cheddar cheese.

1. Start cooking bacon in a large pan.
2. Chop all vegetables and set aside.
3. Take off bacon and set aside on paper towel, then use the remaining grease to
cook vegetables. Start with the onions until translucent in color.
4. While vegetables cook, empty all canned ingredients into large chili pot.
5. Dump cooked vegetables into chili pot.
6. Start browning remaining meat.
7. Add spices.
8. Finely crumble bacon and dump meat into chili pot.
9. Simmer for 30 minutes. Adding water every 10 minutes.
