Base:
400g bucatini pasta-long tubes
4oz. feta cheese
2 egg whites

Meat Filling:
2 lbs lean ground beef
2 large red onions grated
3 tbsp butter
4 tbsp tomato paste
1 tsp sugar
1 c dry red wine
1 tsp nutmeg
½ tsp cinnamon
¼ tsp pepper
1 tsp salt

Bechamel:
1 c flour
1 c butter
8 c milk
4 egg yolks
⅔ c Kefalotyri or Parmigiano-Reggiano
a pinch of nutmeg

Meat sauce:
1. Over medium-high heat and add butter and onions and sauté for 2-3 minutes.
2. Add crumbled ground beef browning very well - this is key for flavour.
3. Blend tomato paste in wine and add to meat, simmer on low heat.
4. Add cinnamon, nutmeg, salt and pepper. Simmer with the lid on for about one hour, if mix gets dry, add another ¼ cup wine. Cool and let flavour develop overnight in fridge.

Bechamel:
5. Melt the butter in a large pan over low-medium heat.
6. Add the flour whisking continuously to make a paste. Add warmed milk in small batches, whisking continuously to prevent lumping. Remove the pan from heat and add yolks, salt, pepper, a pinch of nutmeg and the grated cheese. - whisking quickly.

Pasta:
7. Cook the pasta 2-3 minutes less than the package instructions. Drain the pasta and stir in the egg whites and the feta cheese (smashed with a fork) and mix gently with a spatula.

Assemble:
8. Butter the bottom and sides of a 12x15 pan.
9. Layer the pasta in even rows, top with the meat sauce and even out. Top with the bechamel sauce and smooth out with a spatula.
10. Sprinkle with grated cheese and bake at 350 for about 40 minutes, until a light golden brown. Allow to set before serving.

My mother is a great cook! She embraced Greek cooking and made sure every holiday filled with traditional foods. This is one that no one can top. Some have tried, and they all failed!
