4 egg Whites
8 oz Caster Sugar
Pinch of Cream of Tartar
1 Teaspoon Vinegar
1 Teaspoon Cornflour

If you would like a smaller pavlova the quantities can be changed to 3 egg whites and 6 oz Sugar

For a Coffee Pavlova add 2 teaspoons of nescafe. Walnuts, ginger and cherries can also be used.

Beat the egg whites with a pinch of cream of tartar until stiff, and so that you can hold the bowl upside down and they won't fall out!!!
Add half the sugar and beat for 3 minutes
Fold the remaining sugar and cornflour together and fold in gently to the egg mixture.
Bake Gas Mark 4 for 45 minutes until crispy. Or Gas mark 2 for an hour.

To make meringues I use same recipe, but then cook them for longer and slower in the oven.

Decorate with whipped cream and fruit!

I used to have this as my birthday cake every year when I was younger, my favourite place to eat it was Dyffryn. I am so pleased that Ffion is carrying on the tradition, even eating hers in Dyffryn last year!!
