Bob's Red Mill GF all-purpose flour
salt and pepper to taste
paprika
shaved pecorino or other hard grating cheese

olive oil and butter for cooking

lemon juice to finish

Figure on approximately 3 servings per pound of fish

Use your judgment and sense of taste to make a coating for the fish by mixing GF flour, salt, pepper, paprika, and grated cheese.

Dust fish fillets with the flour mixture.

Cook in 300-350ºF oven on a pan liberally sprinkled with a mixture of olive oil melted butter. Cook at lower temperature if you have more time available, at the higher temperature if you are in a hurry.

Squeeze fresh lemon juice over the cooked fish prior to serving.
