Crust (use the Pie Crust recipe)
1⅓ to 1½ cups milk
3 large eggs
⅛ tsp. ground nutmeg
¼ tsp. kosher salt
¼ tsp. ground black pepper
1 to 2 Tbsp. freshly chopped chives
1 tsp. olive oil
1½ cups sliced cremini mushrooms
3 slices center-cut bacon, cooked and crumbled
¼ cup freshly grated Parmesan cheese

Preheat oven to 400°F. Pre-bake the pie crust. Cool completely on baking sheet on a wire rack (about 15 minutes).
Reduce oven temperature to 375°F.
Cook the mushrooms: Heat a medium skillet over medium heat. Pour in oil, add mushrooms, and sauté until softened and browned, about 5 minutes. Set aside.
Prepare the filling: In a large bowl, whisk together eggs, milk, chives, nutmeg, salt, and pepper.
Assemble the quiche: Spoon the mushrooms, bacon, and cheese into the crust. Pour in the egg mixture and carefully transfer it to the oven.
Bake until set (a knife inserted into the center should come out clean), about 35 to 40 minutes. Let cool for at least 10 minutes. Cut into 6 wedges and serve warm or at room temperature.

The filling can be made up of any pre-cooked veggies, plus a little cheese. For a 9-inch quiche crust, you'll need about 1½ cups total of the veggies. Meat is optional, but a small amount of bacon or ham adds good flavor. For vegetables, use sliced mushrooms, broccoli or cauliflower florets, cubed sweet potatoes, diced bell peppers, or sliced cherry tomatoes. For cheese, choose Parmesan cheese, goat cheese, feta cheese, mozzarella, or ricotta.
