Saute and then remove from pan.
1 chopped Onion
1 - 2 minced cloves Garlic

Saute and then remove from pan.
4-6 Portobella Mushrooms - sliced

Saute:
2 Cups Spinach to wilt.
Season with Salt & Pepper

Spread Onion and Garlic on 1/3 of Puff Pastry
Top with Spinach
Top with Mushrooms
Brush Dijon Mustard on Mushrooms
Sprinkle with Thyme


Directions:

Carefully roll puff pastry and place on cookie sheet, seam side down.
Lightly brush top with melted Vegan Butter.
Slice two holes on top to vent,

Bake 400º Oven for 30-40 minutes until golden.
