½ pound orzo
1½ Tablespoon extra virgin olive oil
⅓ cup pine nuts or walnuts
2 clove garlic minced
½ cup fresh Italian parsley leaves
½ pint grape tomatoes
¼ pound feta cheese
1½ Tablespoon red wine vinegar
optional - ¼ cup basil leaves

Cook orzo in well salted water. In a small heavy skillet, heat ½ Tablespoon olive oil over medium heat until hot but not smoking, Sauté nuts, stirring until golden about 2 minutes. Salt and drain on paper towels. Mince the garlic, Chop the parsley, quarter the tomatoes, and crumble the feta cheese. For the dressing, in a large bowl whisk together the garlic, parsley, vinegar, remaining tablespoon olive oil. Salt and pepper to taste. Drain the orzo and rinse slightly until just warm. Mix all the ingredients together in a large bowl. Add the nuts right before serving and check for salt and pepper. If it seems dry add a little drizzle of Olive Oil. This serves as a main dish for two and it doubles well.

Shrimp can be added to this for a main course meal. Add extra dressing by mixing Olive oil, garlic, lemon juice and salt and pepper. This recipe can be doubled if desired.
