2½ cups Bisquick
¼ cup sugar
1 beaten egg
1 container plain, vanilla or lemon yogurt
2 tbs melted butter
1 cup fresh blackberries
(if using frozen berries, leave in freezer until ready)
½ tsp corn starch
cinnamon sugar to sprinkle on top

Optional Icing:
3-4 tbs orange or lemon juice
1 cup powdered sugar.

1. Preheat oven to 425ºF. Either coat a cookie pan with baking spray or use parchment.

2. Mix sugar and Bisquick in a medium bowl.

3. In a small bowl, mix together egg and yogurt. Add butter slowly continuously stirring to blend.

4. Make a well in the center of the dry mixture. Add egg mixture all at once to flour mixture Stir with a fork just until moistened.

5. Toss berries with cornstarch to coat; add to flour mixture. Fold gently 3 to 5 times, just until berries are incorporated (do not over mix).

6. Gently shape into a 8" disk. Cut in disk in half and cut each half into 4 or 5 wedges with a distinct separation between each wedge. Sprinkle with cinnamon sugar. Bake 12 to 15 minutes or until tops are golden.

7. Optional icing: Whisk 3 tbs orange or lemon juice with 1 cup of powdered sugar until drizzling consistency. Drizzle over warm scones.
