½ medium onion, chopped
1½ cup grated Jarlsberg cheese
4 eggs
1 cup milk
1 cup half & half
1 tbs olive oil
½ tsp garlic salt
⅛+tsp cayenne (to taste)
⅛+tsp nutmeg
1 cup ham (cut into 2" cubes)
¾ tsp "Salad Seasonings"

1 frozen pie shell

Preheat the oven to 425ºF.

1. Defrost pie shell approximately 15 minutes. Gently unfold, roll out on floured board and fit into pie pan. Set aside.

2. Heat olive oil in small frying pan on medium heat, add chopped onions and sauté until golden brown, approx. 8 minutes. Set aside to cool.

3. Combine the eggs, cream, salt, nutmeg and cayenne pepper in a bowl and whisking to mix thoroughly.

4. Spread half the caramelized onions on bottom of pie shell, top w/ half the grated cheese, chopped ham, rest of grated cheese, remainder of onions. Pour milk mixture over all, gently pressing the fillings under the custard. Sprinkle w/ Salad Seasonings or paprika, parmesan cheese and dried parsley flakes.

5. Bake for 15 minutes at 425ºF; then lower the heat to 350ºF and bake an additional 35 - 40 minutes more, until a knife inserted in the center comes out clean. Let cool for 20 minutes before serving, cut in wedges.

Cheddar and Broccoli Quiche:
Omit ham, substitute cheddar for Jarlsberg and add 1½ cup cut up blanched broccoli tops. Pour milk/egg mixture over the top.
(To blanch broccoli, bring 4 quarts water and 2 teaspoons salt to a rapid boil. Fill a large bowl with cold water and ice. Carefully lower the broccoli florets into the boiling water and cook for 2 to 3 minutes, until just barely tender. Remove with a slotted spoon and immediately plunge into the ice water. Pat dry.)

Turkey & Cheddar & Spinach:
Substitute roasted turkey breast for ham, cheddar for Jarlsberg and add 1-1/2 cups clean baby spinach layering half of the spinach on top of the first layer of onions and the rest before the last layer of cheese (layers=pie crust, onion, spinach, cheese, turkey, onion, spinach cheese). Pour milk/egg mixture over the top.

Italian Quiche:
Omit ham and Jarlsberg cheese, add 1½ cups cooked crumbled sweet italian sausage, 1+ cups mozzarella cheese. Mix ¾ cup of ricotta cheese to milk/egg mixture before pouring over the sausage, cheese and onion . Serve w/ marinara sauce on the side.
